Our Food Philosophy
Our focus is on the benefits of eating unprocessed food, the way it was designed to be consumed. We draw from a range of nutritional principles when we design our menu:
- We are great advocates of unprocessed, natural food – vegetables, fruits, grains, nuts and seeds, as close as possible to their natural state. For this reason we always take the least processed options available. For example, we use cold pressed oils over refined oils and we will provide a wholegrain, seed and/or nut based option, rather than one containing processed grains. The processing of food significantly reduces its nutritional value and can create toxic chemicals that deplete existing vitamin and mineral stores in the body, which of course affects our overall health.
- We strive to use organic ingredients wherever possible. Organic foods contain far higher levels of vitamins, minerals and antioxidants, and are more flavoursome than conventional food. And because they are grown without toxic pesticides, herbicides and fertilizers, eating them reduces your intake of chemicals and heavy metals and decreases your exposure to carcinogens.
- We are committed to providing many vegetarian and vegan options as a whole food, plant based diet has been shown to assist with improving the body's alkalinity. An alkaline PH factor reduces the risk of heart disease, cancer and many other diseases.
- We steer clear of all forms of refined sugar. We only use minimal amounts of natural sugar alternatives such as raw agave syrup, stevia, pure maple syrup or dried fruit when absolutely necessary. Let’s be honest, it’s not easy to make a delicious dessert without any kind of sweetness and the natural sugar alternatives bring some nutritional benefits, yet aren’t as addictive as refined sugar.
- We love the health benefits of raw food, especially the extremely high nutritional content. We are fascinated by the ingenious ways of creating raw alternatives to our favourite treats, like chocolate, bread and cheesecake!
- We are committed to supplying low gluten and low dairy foods. The vast majority of our meals and snacks will be gluten-free and dairy-free. However occasionally we may include, for example, spelt flour or a full fat probiotic natural yogurt in one of our delicious desserts. Many people eat a lot of wheat, gluten and dairy products, which are heavily processed, hard to digest and low in nutritional value. Removing these ingredients from the diet brings many health benefits, even for those who are not gluten or dairy intolerant.
